Surrounded by nature, nestled in a snow-covered forest, and overlooking a lakefront terrace suspended between the sky and the water’s surface, more and more hotels are offering their guests refined gastronomic experiences set against stunning panoramic backdrops. Whether outdoors on private terraces or indoors with large windows that dissolve the distance from the surrounding landscape, the direct connection with the environment enhances the sense of well-being, disconnection from daily stress, and complete relaxation.
Studio Apostoli addresses not only the need for structures to enhance their hospitality offering but also the desire of guests to be welcomed into immersive and exclusive environments, thus elevating the presence of nature as a central design objective. The balanced distribution of spaces, proportions between architectural elements, carefully selected colours, finishes, fabrics, lighting design, and interior details – along with references to ancient philosophies – work together to create ‘total’ spaces in harmony with both the surrounding nature and the individual.
Dolomia is the restaurant at Lefay Resort & SPA Dolomiti, a luxury five-star hotel in Pinzolo, Trentino-Alto Adige, designed entirely by Studio Apostoli for the interior project. It offers a sustainable cuisine concept using seasonal produce and local recipes, in line with the Lefay Vital Gourmet gastronomic philosophy. This comprehensive programme, shared across all the luxury hospitality group’s properties, prioritises the health benefits of food to nourish both body and soul. It is offered here in the Dolomites in a welcoming, warm environment, with bespoke furnishings and finishes in wood and stone that evoke the mountains and their architecture. Large windows define the space and offer views of the surrounding vegetation that embraces the Resort. The lounge bar and Sky lounge continue the design philosophy: the first offers cocktails in an enveloping, wood-dominated environment, with windows overlooking the valley, while the latter provides moments of relaxation for aperitifs or after-dinner drinks directly outdoors, heated by a central brazier. The resort’s gastronomic offering is completed by the Grual restaurant, which has been awarded one Michelin star.
Studio Apostoli also oversaw the restyling of the entire Lefay Resort & SPA Lago di Garda, a five-star hotel on the Lombard shore of Lake Garda in Gargnano. The result is architecture that integrates seamlessly into the landscape with great respect, thanks to the use of natural materials and the distinctive configuration of the building’s envelope, punctuated by large windows and terraces that facilitate constant dialogue between the outdoors and interiors. The two restaurants align with the philosophy of the intervention, blending with the Lefay Vital Gourmet culinary concept, and offer expansive outdoor spaces with panoramic views of the lake. Gramen, led by Michelin-starred chef Matteo Maenza, presents two tasting menus inspired by the local area, set on a large terrace overlooking the water, while the Limonaia, reserved for guests, evokes traditional structures for citrus cultivation with a light design configuration and a play of geometries in wooden columns and balustrades, always with a lake view.
Not far from this prestigious location, with a terrace overlooking the Canottieri del Golfo di Salò marina, is Lerive Rock, a gourmet bistro offering an extensive range of local culinary delights, part of the Bellerive Lifestyle Hotel. The five-star boutique hotel underwent significant indoor restyling and space distribution redesigns by Studio Apostoli. The renovation draws inspiration from the philosophy of natural elements, evoked through soft hues, natural finish pairings, and subtle lighting.
